Method
- Prep the Potatoes
- Peel and thinly slice the potatoes.
- Slice the onion as thin as possible.
- Pat potatoes dry for extra crispiness.
- Prepare the Base
- Lay a sheet of puff pastry or pie crust on a baking tray lined with parchment paper.
- Preheat your oven to 400°F.
- Build the Layers
- Repeat the following steps 4 to 5 times:
- Add a layer of sliced potatoes.
- Sprinkle salt, pepper, garlic powder, and some onions.
- Add a handful of shredded cheese.
- Add another layer of potatoes and continue building.
- Add Butter
- Brush melted butter generously over the final top layer.
- Bake
- Bake at 400°F for 35 to 40 minutes, or until the top turns golden, crispy, and lightly browned on the edges.
- Rest and Slice
- Let your potato slab pie cool for about 10 minutes so the layers set.
- Slice into squares and serve warm.
