Potato Slab Pie

Ingredients
  

  • 4 to 5 large potatoes peeled and thinly sliced
  • 1 medium onion thinly sliced
  • 1 cup shredded cheddar or parmesan cheese
  • 3 tablespoons melted butter
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • Fresh herbs optional – rosemary, thyme, chives
  • 1 puff pastry sheet or pie crust

Method
 

  1. Prep the Potatoes
  2. Peel and thinly slice the potatoes.
  3. Slice the onion as thin as possible.
  4. Pat potatoes dry for extra crispiness.
  5. Prepare the Base
  6. Lay a sheet of puff pastry or pie crust on a baking tray lined with parchment paper.
  7. Preheat your oven to 400°F.
  8. Build the Layers
  9. Repeat the following steps 4 to 5 times:
  10. Add a layer of sliced potatoes.
  11. Sprinkle salt, pepper, garlic powder, and some onions.
  12. Add a handful of shredded cheese.
  13. Add another layer of potatoes and continue building.
  14. Add Butter
  15. Brush melted butter generously over the final top layer.
  16. Bake
  17. Bake at 400°F for 35 to 40 minutes, or until the top turns golden, crispy, and lightly browned on the edges.
  18. Rest and Slice
  19. Let your potato slab pie cool for about 10 minutes so the layers set.
  20. Slice into squares and serve warm.
