Carbonara Baked Potatoes Recipe

Ingredients
  

  • 4 large russet potatoes
  • 4 strips bacon chopped
  • 2 egg yolks
  • 1 cup freshly grated parmesan
  • 3 tablespoons cream
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Chives or parsley for garnish optional

Method
 

  1. Bake the Potatoes
  2. Preheat oven to 425°F.
  3. Scrub potatoes, dry them, and rub with olive oil and salt.
  4. Pierce each potato several times with a fork.
  5. Bake for 55 to 65 minutes until soft and fluffy inside.
  6. Cook the Bacon
  7. Add chopped bacon to a skillet over medium heat.
  8. Cook until crispy and golden.
  9. Set aside bacon, leaving a teaspoon of bacon fat for flavor.
  10. Make the Carbonara Filling
  11. In a bowl, whisk together egg yolks, parmesan, cream, garlic, and black pepper.
  12. Add crispy bacon and stir until creamy.
  13. Fill the Potatoes
  14. Slice baked potatoes open and gently fluff the centers with a fork.
  15. Spoon carbonara filling inside and lightly mix it into the potato.
  16. Warm and Serve
  17. Place stuffed potatoes back into the warm oven for 5 minutes to heat through.
  18. Top with extra parmesan, black pepper, and herbs if desired.
  19. Serve hot.

Notes

  • Fresh parmesan gives the smoothest, richest texture.
  • Add more black pepper for a traditional carbonara kick.
  • Pancetta works beautifully as a bacon substitute.
