Bake the Potatoes
Preheat oven to 425°F.
Scrub potatoes, dry them, and rub with olive oil and salt.
Pierce each potato several times with a fork.
Bake for 55 to 65 minutes until soft and fluffy inside.
Cook the Bacon
Add chopped bacon to a skillet over medium heat.
Cook until crispy and golden.
Set aside bacon, leaving a teaspoon of bacon fat for flavor.
Make the Carbonara Filling
In a bowl, whisk together egg yolks, parmesan, cream, garlic, and black pepper.
Add crispy bacon and stir until creamy.
Fill the Potatoes
Slice baked potatoes open and gently fluff the centers with a fork.
Spoon carbonara filling inside and lightly mix it into the potato.
Warm and Serve
Place stuffed potatoes back into the warm oven for 5 minutes to heat through.
Top with extra parmesan, black pepper, and herbs if desired.
Serve hot.
