Apple pie

Ingredients
  

  • For the Pie Crust
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup unsalted butter cold and cubed
  • 6 –8 tablespoons ice-cold water
  • For the Apple Filling
  • 6 –7 medium apples peeled, cored, and sliced
  • Granny Smith + Honeycrisp works best
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 3 tablespoons cornstarch
  • 1 tablespoon butter diced
  • Optional Topping
  • 1 egg beaten with 1 tablespoon milk egg wash
  • 1 tablespoon coarse sugar

Method
 

  1. Make the Crust
  2. Add flour, sugar, and salt to a large bowl.
  3. Cut cold butter into the flour until it looks like coarse crumbs.
  4. Add ice water one tablespoon at a time until dough comes together.
  5. Divide dough into two discs, wrap, and chill for at least 30 minutes.
  6. Prepare the Filling
  7. Preheat oven to 425°F (220°C).
  8. In a large bowl, toss apples with sugars, lemon juice, cinnamon, nutmeg, salt, and cornstarch until evenly coated.
  9. Assemble the Pie
  10. Roll out one dough disc and fit it into a 9-inch pie dish.
  11. Fill with apple mixture and dot with butter.
  12. Roll out second dough disc and place on top. Seal and crimp edges.
  13. Cut small slits in the top crust for ventilation.
  14. Brush with egg wash and sprinkle with coarse sugar if using.
  15. Bake
  16. Bake at 425°F for 15 minutes.
  17. Reduce temperature to 375°F (190°C) and bake for 40–50 minutes, until crust is golden and filling bubbles.
  18. Cool
  19. Let pie cool for at least 2 hours before slicing.

Notes

  • Use firm apples to avoid a mushy filling.
  • Cooling time matters. Cut too early and the filling will spill everywhere.
  • Serve warm with vanilla ice cream or whipped cream.
